Spicy Roasted Edamame

A delicious and healthy snack! This Spicy Roasted Edamame is spicy, slightly sweet, and perfectly roasted. So easy! And ready in about 25 minutes!

Ingredients

  • 12 Oz Fresh Edamame (can substitute frozen, thaw before using)
  • 2 Tbsp Olive Oil
  • 1 Tbsp Gochujang *For extra spice, use 1.5 or 2 Tbsp*
  • 2 Garlic Cloves, minced
  • 1 Tsp Salt
  • 1/2 Tsp Black Pepper

Instructions

  • Preheat oven to 400 degrees and line a baking sheet with parchment paper.
  • In a medium bowl, combine all of the ingredients. Stir well until all of the edamame are coated evenly in the oil and Gochujang.
  • Lay the edamame out evenly on the baking sheet. Roast for 20-25 minutes until the edamame are roasted, soft, and have a slight char around the edges.
  • Let cool for a few minutes before serving. Enjoy while warm.
