Spicy Roasted Edamame
A delicious and healthy snack! This Spicy Roasted Edamame is spicy, slightly sweet, and perfectly roasted. So easy! And ready in about 25 minutes!

- 12 Oz Fresh Edamame (can substitute frozen, thaw before using)
- 2 Tbsp Olive Oil
- 1 Tbsp Gochujang *For extra spice, use 1.5 or 2 Tbsp*
- 2 Garlic Cloves, minced
- 1 Tsp Salt
- 1/2 Tsp Black Pepper
Preheat oven to 400 degrees and line a baking sheet with parchment paper.
In a medium bowl, combine all of the ingredients. Stir well until all of the edamame are coated evenly in the oil and Gochujang.
Lay the edamame out evenly on the baking sheet. Roast for 20-25 minutes until the edamame are roasted, soft, and have a slight char around the edges.
Let cool for a few minutes before serving. Enjoy while warm.
