Slaw Salad with Kale
Delicious and refreshing! This Slaw Salad with Kale is so good and so light. It’s served with a super yummy homemade vinaigrette.

For the Dressing
- 1/2 Cup Olive Oil
- 1/4 Cup Rice Vinegar
- 1 Tbsp Low-Sodium Soy Sauce
- 1 Tbsp Sriracha
- 2 Tbsp Honey
- 2 Garlic Cloves, minced
- 1 Tsp Sesame Oil
- 1/2 Tsp Salt
- Pinch of Crushed Red Pepper Flakes
For the Salad
- 6 Cups Kale, roughly chopped
- 2 Cups Green Cabbage, sliced
- 2 Cups Red Cabbage, sliced
- 1 Cup Carrots, shredded
- 1-2 Jalapeños, sliced or diced (leave the seeds for heat, omit seeds for less heat)
- 1/4 Cup Fresh Cilantro, chopped
Add all of the salad ingredients to a large bowl.
Combine all of the dressing ingredients in a mason jar (or small bowl). Place the lid on the jar and shake really well for 1-2 minutes (if using a bowl, stir really well with a whisk).
Pour about half of the dressing over the salad and toss. Add more dressing to your liking.
You can serve the salad at room temperature or refrigerate for 1-2 hours until cooled (my preference). Enjoy!!
