Slaw Salad with Kale

Delicious and refreshing! This Slaw Salad with Kale is so good and so light. It’s served with a super yummy homemade vinaigrette.

Ingredients

For the Dressing

  • 1/2 Cup Olive Oil
  • 1/4 Cup Rice Vinegar
  • 1 Tbsp Low-Sodium Soy Sauce
  • 1 Tbsp Sriracha
  • 2 Tbsp Honey
  • 2 Garlic Cloves, minced
  • 1 Tsp Sesame Oil
  • 1/2 Tsp Salt
  • Pinch of Crushed Red Pepper Flakes

For the Salad

  • 6 Cups Kale, roughly chopped
  • 2 Cups Green Cabbage, sliced
  • 2 Cups Red Cabbage, sliced
  • 1 Cup Carrots, shredded
  • 1-2 Jalapeños, sliced or diced (leave the seeds for heat, omit seeds for less heat)
  • 1/4 Cup Fresh Cilantro, chopped

Instructions

  • Add all of the salad ingredients to a large bowl.
  • Combine all of the dressing ingredients in a mason jar (or small bowl). Place the lid on the jar and shake really well for 1-2 minutes (if using a bowl, stir really well with a whisk).
  • Pour about half of the dressing over the salad and toss. Add more dressing to your liking.
  • You can serve the salad at room temperature or refrigerate for 1-2 hours until cooled (my preference). Enjoy!!
