Equipment

  • Slow Cooker

Ingredients

  • 2 Lbs Fresh Green Beans, washed and trimmed
  • 2 Ham Hocks (or 1 ham hock and 1 8oz ham steak- see notes above)
  • 1 Medium Sweet Onion, diced
  • 4 Garlic Cloves, minced
  • 1 1/2 Cups Low-Sodium Chicken Broth
  • Salt and Pepper

Instructions

  • Place prepared green beans into the slow cooker. Nestle in the ham hocks. If using 1 ham hock and 1 ham steak, grill and then dice the ham steak before adding.
  • Add the diced onion, garlic, 1 tsp salt, 1/2 tsp black pepper. Roughly toss everything together. Pour the chicken broth over top.
  • Place the lid on the slow cooker and cook on high for 3 hours or on low for 6 hours, stirring halfway through, if possible.
  • When the beans are cooked, but still crisp-tender, remove the ham hocks from the slow cooker. Shred any meat from the bone, placing the meat back into the slow cooker and discard the bone.
  • Taste for seasoning, adding more salt or pepper if needed. Place the slow cooker on the “warm” setting until the beans are ready to serve. Enjoy!!
