Preheat the oven to 400 degrees and line a baking sheet with parchment paper.
In a large plastic bag, combine the matchstick potatoes, olive oil, 1 tsp of salt, and 1/2 tsp of pepper. Shake well to coat the fries.
Spread the fries onto the baking sheet in a single layer, spacing them out as much as you can. The potatoes need space to get nice and crispy.
Bake in the oven for 35-45 minutes until you reach desired crispness. Flip the fries half way through.
When the fries have about 5 more minutes to cook, add the butter to a skillet and melt. Add the garlic and cook, stirring constantly, for 1-2 minutes until the garlic is soft and fragrant.
In a large bowl, combine the fries, garlic butter, parmesan cheese, fresh parsley, 1/2 tsp salt, and 1/2 tsp pepper. Toss to coat the fries.
Pour the fries out onto a platter and top them with the extra parmesan, garlic, and parsley that is left behind in the bottom of the bowl. Enjoy!
