Mexican Cauliflower Rice

A healthy spin on a classic Mexican side dish. This Mexican Cauliflower Rice is so delicious and so easy that you won’t even miss the traditional rice.

Ingredients

  • 1 Whole Cauliflower, riced
  • 1/2 Sweet Onion, diced
  • 3 Garlic Cloves, minced
  • 1 Tbsp Olive Oil
  • 2 Tbsp Tomato Paste
  • 1/3 Cup Tomato Sauce
  • 1/3 Cup Low Sodium Chicken Broth (or Vegetable)
  • 2 Tsp Ground Cumin
  • 2 Tsp Kosher Salt
  • 1 Tsp Black Pepper
  • 1/2 Cup Frozen Sweet Peas
  • 1/2 Lime, juiced
  • 1/4 Cup Fresh Cilantro, chopped

Instructions

  • Heat the olive oil over medium-high heat in a large skillet or pot. Add the diced onion and cook until soft, about 2-3 minutes. Add garlic, cook 30 seconds until fragrant.
  • Add the riced cauliflower and cook 2-3 minutes to toast the cauliflower. Next add the tomato paste, tomato sauce, broth, frozen peas, ground cumin, salt and pepper. Stir well to combine everything.
  • Cook until the cauliflower is tender (but still has a bite to it) and the liquid has been absorbed.
  • Squeeze in the lime juice and stir in the chopped cilantro. Check for seasoning and add salt and pepper, if needed. Enjoy!
