After putting the kids to bed, my husband and I usually stay up (in the living room) for an hour or two to watch the news or any tv shows that we watch together. Sometimes we watch a movie together. And it’s so hard to not snack. Sometimes we have popcorn… and popcorn isn’t a terribly unhealthy snack, but popcorn can get boring. So I’m always on the hunt for exciting snacks that I don’t feel bad about having at night. Cue this Spicy Roasted Edamame.
I absolutely love roasted edamame. Edamame has such a mild flavor that you can do so many things with it. My favorite ways to eat edamame are roasted plain with olive oil and salt or with garlic and parmesan. But my absolute favorite way to eat it is Spicy and Roasted.
This recipe is incredibly simple and only calls for a handful of ingredients. Prep time is all of two or three minutes and then it’s into the oven for roasting. After 20-25 minutes of roasting, you have an incredibly delicious and healthy snack to chow down on. It’s great as a late-night snack, a side dish, or an appetizer. You definitely gotta give this Spicy Roasted Edamame a try!

To Begin…
Preheat your oven to 400 degrees and line a baking sheet with parchment paper.
Let’s Talk Edamame.
To a medium bowl, add 12 oz of fresh edamame. You can use frozen edamame, just thaw and pat dry before using. You could also use shelled edamame. Personally, I enjoy the unshelled version for this recipe, but you could absolutely substitute- you will probably need to adjust the cooking time though.
The Rest of the Players.
Also to the bowl, add 2 tbsp olive oil, 1 tbsp Gochujang, 2 minced cloves of garlic, 1 tsp salt, and 1/2 tsp black pepper.
A Note About Gochujang.
Gochujang is a red pepper paste and it can be found in the Asian aisle of your grocery store. It is spicy and slightly sweet. I buy a squeeze bottle of it and keep it in my refrigerator, adding it to things for a little bit of heat. For this recipe, I use 1 tbsp, but if you like things on the spicier side- go ahead and bump it up to 1.5 or 2 tbsp.
Stir really well to evenly coat the edamame in the olive oil and Gochujang. Spread the edamame out evenly on the prepared baking sheet.
Roasting.
Roast the edamame for 20-25 minutes until they are soft and slightly charred around the edges. I like a good char, so I pulled them out closer to 25 minutes.
Let the edamame cool for a few minutes before serving. And then gobble them up while they’re warm!

Ingredients
- 12 Oz Fresh Edamame (can substitute frozen, thaw before using)
- 2 Tbsp Olive Oil
- 1 Tbsp Gochujang *For extra spice, use 1.5 or 2 Tbsp*
- 2 Garlic Cloves, minced
- 1 Tsp Salt
- 1/2 Tsp Black Pepper
Instructions
- Preheat oven to 400 degrees and line a baking sheet with parchment paper.
- In a medium bowl, combine all of the ingredients. Stir well until all of the edamame are coated evenly in the oil and Gochujang.
- Lay the edamame out evenly on the baking sheet. Roast for 20-25 minutes until the edamame are roasted, soft, and have a slight char around the edges.
- Let cool for a few minutes before serving. Enjoy while warm.
