Breakfast is often the most skipped meal of the day. It was said for years and years that it was the most important meal of the day, but now I’ve read a few articles that argue the validity of that. It seems like everything gets disputed and overturned at some point. Coffee is bad for you, no it’s good for you… well, it’s good, but you should only have 8.246 ounces a day. Haha! It makes me think of this Funny or Die spoof on trying to keep up with what “healthy eating” means in the moment vs a week from now…

While I may not know if breakfast is technically the most important meal of the day, I do know that this Smashed Avocado Toast checks the 3 boxes of the most important things that makes a breakfast great- it’s tasty ✔️, it’s fast ✔️ and it can be eaten standing or on the run ✔️. Boom.
Here’s the quick rundown on how I made it 👇🏻
Grab a piece of toast, any bread you like. Technically, I guess it doesn’t even have to be a piece of toast. It could be an English muffin, a bagel, whatever you like. In a small bowl, gently smash half of an avocado with a fork, mix in the juice of about half of a lime (about one tablespoon) and gently mix in your green onion and parsley (saving a little for garnish).
Gently spread the smashed avocado over your warm toast. I like my avocado super chunky, so I very gently spread it. Top it with a pinch of crushed red pepper flakes, some Maldon salt flakes and your leftover herbs. Give it a small drizzle of EVOO over top and boom, you’re done.

- 1 Piece Whole Grain Toast
- 1/2 Avocado
- 1 Tbsp Fresh Parsley, chopped
- 1 Green Onion, sliced
- EVOO
- Pinch Crushed Red Pepper Flakes
- 1/2 Lime, juiced
- Pinch Maldon Sea Salt

- In a small bowl, gently mash the avocado with a fix. Squeeze in the lime juice and stir, along with half of your green onion and parsley.
- Smear the mashed avocado over some warm toast. Top with the other half of your parsely and green onion. Drizzle a small amount of EVOO over the avocado and then top with crushed red pepper flakes and Maldon sea salt flakes.
