Here I am… jumping on the Avocado Toast bandwagon. How can you not, though? There’s just something about spreading a silky, smooth avocado all over some warm toast that just makes you wanna scream, “I can conquer anything today!” Haha!
There must be a million different recipes for avocado toast out there. Okay, I didn’t count and that might be an exaggeration, but there is a ton of recipes for something that could literally be as simple as mashed avocado and toast. So, I’m going to throw my hat in the ring with something different. I already have a go-to recipe for a mobile version of avocado toast. You know, the breakfast that you cram in as your chasing the kids around the house or driving them to school? But, this isn’t that. This is the recipe for avocado toast that you get to sit down and eat and maybe even enjoy a cup of coffee as well. Thus we have the Knife & Fork Avocado Toast!

- 1/2 Avocado, sliced
- 1 TBSP Fresh Lemon Juice
- 1 TBSP EVOO
- Sea Salt Flakes
- Handful of Arugula
- Parmesan, freshly shredded
- Pinch of Crushed Red Pepper, optional
- 1 Slice Whole Grain Toast or bread of choice

- In a small bowl, whisk together the lemon juice and EVOO. Throw in the handful of arugula and toss to coat.
- To your slice of toast, lay the sliced avocado across the middle. Sprinkle the avocado with the flaked sea salt and crushed red pepper.
- Top with lemon dressed arugula and then shred Parmesan over top.
