Fresh Lemon Juice

EVOO
Sea Salt Flakes
Handful of Arugula
Parmesan, freshly shredded
Pinch of Crushed Red Pepper, optional

Whole Grain Toast
or bread of choice
Instructions
In a small bowl, whisk together the lemon juice and EVOO. Throw in the handful of arugula and toss to coat.
To your slice of toast, lay the sliced avocado across the middle. Sprinkle the avocado with the flaked sea salt and crushed red pepper.
Top with lemon dressed arugula and then shred Parmesan over top.
