My husband and I are not huge mayo fans. Mayo doesn’t bother me as long as it’s not an overload of mayo. Like, I would gladly down a plate of chicken salad with no problem. A little mayo on my sandwich, eh, I can deal… My husband tho… if he has a little mayo on one of his sandwiches… well, it’s a day-ruiner for him. Haha! Okay, maybe that’s an exaggeration, but you won’t ever be able to slip a little mayo by him.
So let’s get to this mayo-less slaw. We love a good slaw. Slaws are so fantastic on sandwiches. The crunch, the freshness- I just love adding it as a finishing touch.
I made this root beer pork and I knew that the fam would want it as a sandwich. Instead of having a plain ol’ pork sandwich (which there was nothing plain about that root beer pulled pork 😉), I knew that I wanted to have a little freshness and brightness added to it. Hence this Jalapeño Slaw with Cilantro Lime Vinaigrette. It takes minutes to throw together and it’s totally delicious.
In a medium bowl, combine the EVOO, white wine vinegar, honey, juice of 1 lime and a pinch of salt and pepper. Whisk together until everything is incorporated and the honey has dissolved. Add the cilantro and stir.
In a large bowl, add 8 oz of a slaw mix, the (chopped or julienned) red pepper and 2-3 thinly sliced jalapeños and toss it together. Pour the vinaigrette over the slaw and give it a good toss. I didn’t want the heat to be overpowering in the slaw, so I de-seeded my jalapeños as much as I could.
I wanted a punch of vinegar with this slaw because I was adding it to a sandwich, so if you’d like to tone down the vinegar, add a little more honey to level it out.

- 2-3 Jalapeños, thinly sliced Remove seeds for less heat
- 8 Oz Coleslaw Mix
- 1/2 Red Pepper, chopped or thinly sliced
- 1/4 Cup Chopped Fresh Cilantro
- Juice of 1 lime
- 3 Tbsp EVOO
- 2 Tbsp White Wine Vinegar
- 2 Tbsp Honey
- Salt and Pepper

- In a medium bowl, add the EVOO, vinegar, honey, lime juice and a pinch of salt and pepper. Stir together well until the honey begins to dissolve. Add the chopped cilantro and stir to mix.
- In a large bowl, toss together the coleslaw mix, red pepper and jalapeños.
- Pour the vinaigrette over top and toss to coat the slaw. Taste and reseason with salt and pepper if necessary. Note: This slaw packs a vinegar-y punch, if you want to level it out a bit, add a little more honey.
