In a medium bowl, add the EVOO, vinegar, honey, lime juice and a pinch of salt and pepper. Stir together well until the honey begins to dissolve. Add the chopped cilantro and stir to mix.
In a large bowl, toss together the coleslaw mix, red pepper and jalapeños.
Pour the vinaigrette over top and toss to coat the slaw. Taste and reseason with salt and pepper if necessary.
Note: This slaw packs a vinegar-y punch, if you want to level it out a bit, add a little more honey.
