Fast, easy, and healthy(ish) dessert options? Say no more. What I love most about this Healthier (Single-Serving) Molten Chocolate Chip Cookie is that I’m not making a huge batch of something. I can get my cookie fix and feel good about not overdoing it. And also feel good about the fact that it’s also slightly healthier than your average dessert. Plus, it’s so good. So good.
The other great thing about this dessert is that it doesn’t have to be single-serving. Well, that’s as long as you have more than one ramekin in your house. And I’m willing to bet that if you have any ramekins in your house, that you have more than one. This recipe is so easy to double. Or in the case at my house, quadruple. And if you’re feeling really frisky, go ahead and top it with a scoop of ice cream.
Let me show you how I made this Healthier (Single-Serving) Molten Chocolate Chip Cookie 👇🏻
Start by preheating your oven to 375 and spraying a ramekin with cooking spray.
In a small bowl, mash 2 tbsp softened butter and 2 tbsp brown sugar together with a fork. Mix well, until incorporated. Now add 1 egg yolk and 1/2 tsp vanilla and mix well.
Add 1/4 cup oat flour, 1/2 tsp baking soda, and pinch of salt. Mix until a dough forms. Add about 1 1/2 tbsp chopped dark chocolate, reserving another 1 1/2 tbsp for the “molten” middle. This is what your dough should look like 👇🏻
Now add half of you dough to your ramekin and top with your reserved dark chocolate pieces. This will be the molten part to your cookie.
Now top it with the other half of your dough.
Now toss that cookie into the oven. Bake it for about 18 minutes. At 18 minutes, it’s still pretty gooey and “molten” in the middle. If you like it really molten, bake a few minutes less at 16. If you like it a little more done, maybe shoot for 20 minutes.
Serve the cookies when warm, but just be careful because they are super hot right out of the oven. Maybe consider a scoop of ice cream…

Note: As stated above, this recipe is easily made into multiple servings. You can double or quadruple the recipe. Simply multiply the ingredients by the number of servings that you want, mix them all in the bowl together, and evenly divide the batter among that number of ramekins.
