I have two picky eaters. It’s so incredibly frustrating. I know exactly where I went wrong- I catered to their picky eating for too long and it’s been an uphill battle ever since. And thus, I end up making my kids a seperate dinner waaaay too often. In an attempt to get out of this rut, I started making dinners that I have the kids help me prepare. Like these BBQ Chicken Flatbread Pizzas. These flatbread pizzas are an incredibly delicious pizza shortcut. Kids or no kids, you gotta try these!
My kids love pizza. I don’t think that I’ve ever met a kid that didn’t like pizza. Or an adult, for that matter. What’s great about these pizzas is that they’re made using flatbreads- super quick and easy. You can usually find flatbreads in the deli section of your grocery store.
The great thing about using flatbreads is the fact that everyone gets their own pizza and can therefore be customized for each eater. Or they’re great for meal prep- simply prep all of the ingredients in advance and then cook the flatbread pizzas off on the day that you are ready to eat them. Simple!
Let me show you how I made these BBQ Chicken Flatbread Pizzas 👇🏻
For this recipe, I’d recommend some quality flatbread. Since you’re not baking these pizzas on traditional pizza dough, get a thin flatbread that will get nice and crispy. I used shredded chicken for these pizzas, but the great thing about flatbread pizzas is how interchangeable they can be. You could use any leftover chicken or a rotisserie chicken. If you decide to make your own shredded chicken, this is my favorite way to do it…
Here’s how I make Homemade Shredded Chicken
Preheat your oven to 450 degrees and line a baking sheet with foil for easy clean up. Melt 2 tbsp of unsalted butter and brush the butter onto both sides of 2 large boneless, skinless chicken breasts. Sprinkle both sides of the chicken with salt, pepper, onion powder, garlic powder, and paprika. No need to measure, just give it an even, generous seasoning.
Then cook the chicken breasts for 15-20 minutes until the chicken is cooked through and has an internal temperature of 165 degrees. (The actual cooking time will depend on the thickness of your chicken.) Let the chicken cool for a few minutes and then shred it all up.
Flatbread Assembly
Lay out your flatbreads and lower the heat of your oven to 425 degrees.
Slather some BBQ sauce on the flatbreads and spread it around, leaving a small rim for the “crust”. Then sprinkle on some corn, black beans and diced onion. Then top it with your shredded chicken and some mozzarella cheese. Feel free to customize it with whatever vegetables that you like! Spinach, zucchini, broccoli… the options are endless.
Bake the pizzas for 10-15 minutes until the cheese is melted and the flatbread is crispy. Optional: top with fresh chopped cilantro or parsely.
And that’s it! It’s that simple! I usually cut the flatbreads into fourths for serving.

- 5 Flatbreads
- 1/2 Cup Bbq Sauce Whatever you like
- 1/2 Cup Corn (fresh, frozen, canned)
- 1/2 Cup Canned Black Beans, drained and rinsed
- 1/2 Cup Sweet Onion, diced
- 1 1/2 Cups Shredded Mozzarella Cheese
- Fresh Chopped Parsley or Cilantro, optional
Ingredients
For the Shredded Chicken (Optional, substitute with any precooked shredded chicken or rotisserie chicken)
For the Pizzas-

- If you’re making the homemade shredded chicken, preheat oven to 450 degrees and line a baking sheet with foil. Brush your chicken breasts with the melted butter. Then (generously and evenly) season with the salt, pepper, onion powder, garlic powder, and paprika.
- Cook in the oven for 15-20 minutes until chicken is cooked through and reaches an internal temperature of 165 degrees. Allow the chicken to sit for a few minutes and then shred.
- Turn your oven temperature down to 425. Lay out the flatbreads and evenly spread the bbq sauce onto all of the flatbreads, leaving a rim for “crust”. Use as little or as much as you prefer. Then sprinkle the flatbreads evenly with the black beans, onion and corn. (Customize however you like, adding any vegetables or ingredients that you love)
- Top the flatbreads with the shredded chicken and the mozzarella. Place the pizzas on a baking sheet and cook for 10-15 minutes until the cheese is melted and the flatbreads are crispy. Top with optional chopped parsely or cilantro and serve. Enjoy!
