Iām a big fan of roasted veggies. And roasted potatoes. And roasted meat for that matter. If I can put all three of those things on one pan and make a dinner out of it all in about a half hour, sign me up. Thatās exactly what I did with this Italian Chicken Sausage Sheet Pan Dinner. Basically all of the things on this sheet pan are all of my favorite things to roast. Green beans, potatoes, onion, and sausage. It is total heaven.
For this recipe, I used Italian Chicken Sausage to cut back on the calories. You could use a pork sausage, but please note that the chicken sausage used in this recipe is pre-cooked. So you might have to adjust your cooking time if you are substituting with a raw product.
So easy, so delicious.
This Italian Chicken Sausage Sheet Pan Dinner was incredibly easy and delicious. The first time that I threw this dinner together, we had a guest in our house. It was a person from a flooring company that was giving us a quote for a project that weāre wanting to get done. I had this dinner in the oven and he must have commented a half dozen times about how delicious it smelled. I think that he also may have stalled a little to see if he could grab a seat at the table with us! Hahaha! Wouldnāt that have been funny?
Iāve made it quite a few times since that day because it is just so easy and so good. Youāve got to try this one! It will definitely become a favorite!
Let me show you how I made this Italian Chicken Sausage Sheet Pan Dinner šš»
Start by preheating the oven to 425 degrees and line a very large sheet pan with parchment paper.
In a medium bowl, add 1/3 cup olive oil, 1/4 cup low-sodium soy sauce, 1 tbsp Dijon mustard, 1 tbsp of hot sauce or sriracha, 3 finely minced garlic cloves, 1 tbsp dried parsley, 1 tbsp grated parmesan cheese, 1 tsp onion powder, 1 tsp paprika, 1 tsp EACH salt and pepper, and a pinch of crushed red pepper flakes. Whisk it all together and set aside.
Add 12 oz bite-size red potatoes (halved or quartered depending on size) to a large bowl. Pour 1/3 of the marinade over the potatoes and toss to coat. Dump the potatoes out onto the prepared sheet pan. The potatoes will need a little more roasting time than the rest of the ingredients. So weāre going to roast them for 15 minutes by themselves.
While the potatoes are roasting, add the sliced sausage pieces, onion slices, and green beans to the large bowl. Pour in the rest of the marinade and toss to coat.
When the potatoes have roasted for 15 minutes, remove the sheet pan from the over. Flip the potatoes and then add the rest of the ingredients to the sheet pan. Roast for another 15-20 minutes.
Itās done cooking when everything is fork-tender and has a slight char.

Ingredients
- 4 Italian Chicken Sausage links, cut into slices
- 12 Oz Bite-Size Red Potatoes, cut into 1ā pieces (halved or quartered depending on size)
- 1 Sweet Onion, cut into thick slices
- 3 Cups Green Beans, washed and trimmed
Marinade-
- 1/3 Cup Olive Oil
- 1/4 Cup Soy Sauce
- 1 Tbsp Dijon Mustard
- 1 Tbsp Hot Sauce or Sriracha
- 3 Garlic Cloves, finely minced
- 1 Tbsp Dried Parsley
- 1 Tbsp Grated Parmesan (optional, but recommended)
- 1 Tsp Onion Powder
- 1 Tsp Paprika
- 1 Tsp Salt
- 1/2 Tsp Black Pepper
- Pinch of Crushed Red Pepper Flakes
Instructions
- Preheat oven to 425 degrees and line a large sheet pan with parchment paper.
- In a medium bowl, combine all of the marinade ingredients and whisk together. Set aside.
- Add the red potatoes to a large bowl and pour 1/3 of the marinade over the potatoes. Toss the potatoes until they are well coated. Dump the potatoes out onto the prepared sheet pan. Roast the potatoes for 15 minutes.
- While the potatoes are roasting, add the chicken sausage, sliced onion, and green beans to the large bowl. Pour the rest of the marinade over the sausage slices, onion slices, and green beans. Toss to coat.
- When the potatoes have roasted for 15 minutes, remove sheet pan from the oven. Stir up the potatoes to turn them and then add the sausage mix to the sheet pan. Cook the potatoes, sausages, and veggies for another 15-20 minutes. Everything should be fork-tender and have a slight char.
- Remove from oven and serve hot. Top with a little extra grated Parmesan if desired. Enjoy!
