I’ve had writer’s block with the introduction of this post for almost a week. Because what do you say about garlic bread? It’s so simple and yet so delicious. Although, I have had some really bad garlic bread too. It seems like it’s easier to screw things with just a handful of ingredients. So what makes garlic bread great? For one, you’re looking for a crispy, not soggy final product. You also want the right amount of garlic and butter. And then you’re faced with the option- to cheese or not to cheese? Well, obviously, with this Cheesy Garlic Bread, I chose to cheese.
For this recipe, I used my Whipped Roasted Garlic Butter to butter the bread as the base of the garlic bread. I have attached the link below. While, you can substitute the butter, (and I have included those substitutions below) I’d highly recommend giving the butter a try.

First thing’s first- The most important thing that you are going to need for this recipe is this Whipped Roasted Garlic Butter (link below)…
If you aren’t able to make this butter or are too short on time to make it, I will list a substitute in the instructions below. But I would highly recommend making this butter… for this recipe and for other stuff. Cause it’s delicious.
Okay, now back to the bread.
Preheat your oven to 425 degrees. Cut a large loaf of French bread or ciabatta bread in half lengthwise. You can also cut it in half width-wise so that it is more manageable (so that it is now in four pieces like I did in the pictures below).
Spread about 1/4 cup of the Whipped Roasted Garlic Butter along the insides of the bread. You want a good schmear on the bread.
Whipped Roasted Garlic Butter substitution:
If you can not make the roasted garlic butter or are short on time, you can simply add about 1 tbsp of garlic powder (or a few finely minced garlic cloves), 1/2 tsp salt, 1/4 tsp black pepper, and 1 tsp of dried parsley to 1/4 cup of softened butter. Stir to combine.
Place the top piece of the bread back onto the bottom piece and wrap them together in foil. Place the wrapped bread into the oven, directly onto an oven rack in the middle of the oven.
Bake in the oven for 15 minutes. After the 15 minutes is up, remove the bread.
Line a baking sheet with a new piece of foil and carefully open up the bread foil packets. Lay the bread pieces onto the prepared baking sheet.
Now divide the 2 cups of mozzarella cheese and the 1/2 cup of grated parmesan cheese across the bread pieces. Sprinkle the tops with some dried parsley flakes.
**Let’s talk about mozzarella cheese for a second. I buy blocks of mozzarella cheese. Most of the time when you buy blocks of cheese, it goes further than buying a bag of cheese. I have found that this isn’t so with mozzarella, BUT freshly shredded mozzarella has a much much better melting result. And cheese pull, ugh, the cheese pulls are fantastic with freshly shredded mozzarella. So I’d recommend shredding your own mozzarella instead of buying a bag.
Bake the bread in the oven for about 10 more minutes until the cheese is melted, bubbly, and browned lightly on top.
Let cool for a minute or two and then slice them up and serve.

- 2 Cups Mozzarella Cheese, shredded
- 1/2 Cup Parmesan Cheese, grated
- Dried Parsley
Instructions

- Spread the softened roasted garlic butter along the inside of the bread. Place the top of the bread back onto the bottom of the bread and wrap with foil. Place the bread directly on an oven rack (in the middle of the oven) and bake for 15 minutes.
- After 15 minutes, remove the bread from the oven. Line a baking sheet with a new piece of foil. Carefully open up the bread foil packets. Lay the bread pieces on the baking sheet and top with mozzarella and parmesan cheese. Sprinkle the tops of the bread with a little dried parsley flakes.
- Bake in the oven for about 10 minutes or until the cheese is melted, bubbly, and slightly golden on top. Serve warm. Enjoy!
