Summer Corn Salad
This Summer Corn Salad is the epitome of Summer in a dish! Delicious, sweet corn mixed with crispy, salty bacon and other yummy ingredients! You’ll love this recipe!

- 5 Ears Fresh Sweet Corn, husked and kernels sliced off cob
- 10 Pieces Bacon, cooked crispy and diced
- 2 Jalapeños, seeded and finely diced
- 3 Green Onions, sliced thinly
- 2 Tbsp Mayonnaise
- 2 Tbsp Sour Cream
- 1 Lime, juiced
- 1/2 Tsp Garlic Powder
- 1/2 Tsp Salt
- 1/2 Tsp Black Pepper
- 1 Red Bell Pepper, diced (optional)
Combine all ingredients in a large bowl and mix well to combine. Taste for seasoning and add more salt or pepper, if necessary.
Serve right away (at room temperature) or place in the refrigerator and chill first or until you’re ready to eat it.
Place the leftovers in an air-tight container in the refrigerator for up to 3 days.
