Ingredients

  • 1 Tbsp Olive Oil
  • 1 Lb Lean Ground Beef
  • 1/2 Cup Sweet Onion, finely diced
  • 3 Large Garlic Cloves, finely minced
  • 4 Cups Marinara, homemade or store-bought
  • 1 Large Carrot, shredded or grated
  • 1 Medium Zucchini, shredded
  • 1/4 Cup Grated Parmesan Cheese + extra for topping
  • Fresh Chopped Parsley or Basil, for topping (optional)

Instructions

  • In a large skillet, heat the olive oil over medium-high heat. Add the lean ground beef and onion. Break up the beef as it cooks. Cook until the beef is no longer pink and drain off excess fat if there is more than a tablespoon or two.
  • Add the garlic and cook until fragrant, about 1 minute.
  • Add the shredded (or grated) zucchini and carrot and cook until the veggies are softened, about 3-4 minutes.
  • Add the marinara and parmesan cheese, stir well. Lower the heat to medium-low so that the marinara is at a gentle simmer. Let simmer for about 10-15 minutes to let the flavors all meld together.
  • Serve the marinara over pasta. Top with additional parmesan cheese and chopped parsely or basil (optional). Enjoy!
