Baked Peanut Butter & Banana Oatmeal

- 3 Over-Ripe Bananas, mashed
- 2 1/2 Cups Old Fashioned Oatmeal
- 1 Tbsp Chia Seeds
- 1/4 Cup PB Fit (or other powdered Peanut butter)
- 1 Tsp Baking Powder
- 1 Tbsp Ground Cinnamon
- 2 Large Eggs
- 1 Cup Milk (Any kind. I used Vanilla Almond)
- 1/4 Cup Pure Maple Syrup
- 1 Tbsp Pure Vanilla Extract
- Pinch of Salt
- 1/2 Cup Mix-Ins (Anything you like- fresh fruit, dried fruit, chocolate chips, etc)
Preheat oven to 350 degrees and spray a 7”x11” baking dish with non-stick spray.
In a large bowl, mash 3 bananas really well with a fork. Add the remaining ingredients (except the mix-ins) and stir.
Gently stir in 1/2 cup of mix-ins. Pour the oatmeal mixture into the prepared baking dish. Use a rubber spatula to even it out in the dish. Top the oatmeal with a little more of the mix-ins, if desired.
Bake in the oven for about 25 minutes until the oatmeal is golden around the edges and baked through (should spring back when touched).
Let it sit in the hot pan until set and cooled. Refrigerate leftovers in an air-tight container or plastic bag for up to one week. Heat leftovers in the microwave until desired warmness. Enjoy!
