Baked Peanut Butter & Banana Oatmeal

This Baked Peanut Butter & Banana Oatmeal is a delicious and exciting way to get in your oatmeal and fruit. Gives you a healthy and energizing start to your day.

Ingredients

  • 3 Over-Ripe Bananas, mashed
  • 2 1/2 Cups Old Fashioned Oatmeal
  • 1 Tbsp Chia Seeds
  • 1/4 Cup PB Fit (or other powdered Peanut butter)
  • 1 Tsp Baking Powder
  • 1 Tbsp Ground Cinnamon
  • 2 Large Eggs
  • 1 Cup Milk (Any kind. I used Vanilla Almond)
  • 1/4 Cup Pure Maple Syrup
  • 1 Tbsp Pure Vanilla Extract
  • Pinch of Salt
  • 1/2 Cup Mix-Ins (Anything you like- fresh fruit, dried fruit, chocolate chips, etc)

Instructions

  • Preheat oven to 350 degrees and spray a 7”x11” baking dish with non-stick spray.
  • In a large bowl, mash 3 bananas really well with a fork. Add the remaining ingredients (except the mix-ins) and stir.
  • Gently stir in 1/2 cup of mix-ins. Pour the oatmeal mixture into the prepared baking dish. Use a rubber spatula to even it out in the dish. Top the oatmeal with a little more of the mix-ins, if desired.
  • Bake in the oven for about 25 minutes until the oatmeal is golden around the edges and baked through (should spring back when touched).
  • Let it sit in the hot pan until set and cooled. Refrigerate leftovers in an air-tight container or plastic bag for up to one week. Heat leftovers in the microwave until desired warmness. Enjoy!
