Baked Parmesan Zucchini Fries
Baked and not fried. These Baked Parmesan Zucchini Fries are easy to make and absolutely delightful to eat. Great as an appetizer or a side dish.

- 2 Large Zucchini, cut into fries
- 1/4 Cup AP Flour
- 1/2 Tsp Salt + more
- 1/4 Tsp Black Pepper
- 1/4 Tsp Paprika
- 1/4 Tsp Onion Powder
- 1/4 Tsp Garlic Powder
- 3 Large Eggs
- 1 Cup Panko Bread Crumbs
- 1/2 Cup Parmesan Cheese, grated
- 2 Tbsp Dried Parsley
- Olive Oil Spray
- Marinara or Ranch, for serving (optional)
Preheat oven to 425 degrees and line 2 baking sheets with parchment paper. Add the flour, salt, pepper, paprika, onion powder, and garlic powder to a large ziploc bag. Shake it up a little to mix and then add the zucchini fries. Shake really well to coat the fries.
In a large, flat bowl, add the 3 eggs and whisk. In a second large, flat bowl, add the bread crumbs, parmesan, and parsley and mix.
Remove the zucchini slices one at a time, dip into the egg and then into the breadcrumb-parm mixture. Place the breaded zucchini onto the prepared baking sheet. Repeat until all of the zucchini fries are breaded.
Spray the fries lightly with olive oil spray. Bake for 20-25 minutes until the zucchini fries are crispy and golden brown. Serve immediately while warm. Serve with ranch or marinara on the side for dipping (optional). Enjoy!
