Ingredients

  • 2 Large Zucchini, cut into fries
  • 1/4 Cup AP Flour
  • 1/2 Tsp Salt + more
  • 1/4 Tsp Black Pepper
  • 1/4 Tsp Paprika
  • 1/4 Tsp Onion Powder
  • 1/4 Tsp Garlic Powder
  • 3 Large Eggs
  • 1 Cup Panko Bread Crumbs
  • 1/2 Cup Parmesan Cheese, grated
  • 2 Tbsp Dried Parsley
  • Olive Oil Spray
  • Marinara or Ranch, for serving (optional)

Instructions

  • Preheat oven to 425 degrees and line 2 baking sheets with parchment paper. Add the flour, salt, pepper, paprika, onion powder, and garlic powder to a large ziploc bag. Shake it up a little to mix and then add the zucchini fries. Shake really well to coat the fries.
  • In a large, flat bowl, add the 3 eggs and whisk. In a second large, flat bowl, add the bread crumbs, parmesan, and parsley and mix.
  • Remove the zucchini slices one at a time, dip into the egg and then into the breadcrumb-parm mixture. Place the breaded zucchini onto the prepared baking sheet. Repeat until all of the zucchini fries are breaded.
  • Spray the fries lightly with olive oil spray. Bake for 20-25 minutes until the zucchini fries are crispy and golden brown. Serve immediately while warm. Serve with ranch or marinara on the side for dipping (optional). Enjoy!
