Oven-Roasted Home Fries

Incredibly delicious homemade potatoes. These Oven-Roasted Home Fries are the perfect side dish to almost any entree.

Ingredients

  • 2 Lbs Russet Potatoes, (peeled or unpeeled) and cubed
  • 2 Tbsp Olive Oil
  • 2 Tsp Paprika *Can use Smoked Paprika to give it a smokey flavor*
  • 1 Tsp Kosher Salt
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • 1/2 Tsp Black Pepper
  • 1/4 Cup Fresh Parsley, chopped (Can substitute with 2 tbsp dried parsley)

Instructions

  • Preheat oven to 400 degrees and line a baking sheet with parchment paper. 
  • In a large bowl, toss the cubed potatoes with the olive oil, paprika, salt, and pepper until the potatoes are evenly coated. **If you are using dried parsley instead of fresh, go ahead and toss it in now**
  • Spread the potatoes onto the prepared baking sheet into a single layer, spacing out as much as you can.
  • Bake for 20 minutes and then remove baking sheet and flip the potatoes (once again spreading them into a spaced out, single layer).
  • Bake another 20 minutes or until the potatoes reach a desired crispiness. You can even turn your broiler on low to crisp them up for a few minutes at the end.
  • When done, remove baking sheet and pour the parsley over the home fries and toss. Taste for seasoning and add more salt or pepper if necessary. Enjoy!
