Oven-Roasted Home Fries
Incredibly delicious homemade potatoes. These Oven-Roasted Home Fries are the perfect side dish to almost any entree.

- 2 Lbs Russet Potatoes, (peeled or unpeeled) and cubed
- 2 Tbsp Olive Oil
- 2 Tsp Paprika *Can use Smoked Paprika to give it a smokey flavor*
- 1 Tsp Kosher Salt
- 1 Tsp Garlic Powder
- 1 Tsp Onion Powder
- 1/2 Tsp Black Pepper
- 1/4 Cup Fresh Parsley, chopped (Can substitute with 2 tbsp dried parsley)
Preheat oven to 400 degrees and line a baking sheet with parchment paper.
In a large bowl, toss the cubed potatoes with the olive oil, paprika, salt, and pepper until the potatoes are evenly coated. **If you are using dried parsley instead of fresh, go ahead and toss it in now**
Spread the potatoes onto the prepared baking sheet into a single layer, spacing out as much as you can.
Bake for 20 minutes and then remove baking sheet and flip the potatoes (once again spreading them into a spaced out, single layer).
Bake another 20 minutes or until the potatoes reach a desired crispiness. You can even turn your broiler on low to crisp them up for a few minutes at the end.
When done, remove baking sheet and pour the parsley over the home fries and toss. Taste for seasoning and add more salt or pepper if necessary. Enjoy!
