I’m going to get straight to the point with this Verde Steak Burrito. It is absolutely delicious. It’s so good that I made it three times in less than 2 weeks. Seriously, this burrito has so much going on. Yeah, that’s right, going on. It’s hot. Hot like construction workers whistling at it, kinda hot. Okay, I totally went off on a tangent, let me reel myself back in. This burrito has NY Strip Steak, bell peppers, onions, home fries, cheese, and salsa verde. I’d whistle at this burrito too.
This burrito is so quick and so easy. It does, however, require a little prepping beforehand. This recipe calls for salsa verde, obviously. You can buy it or you can make it. Please make it if you have the opportunity to, it’s way more delicious. This Verde Steak Burrito is also made with home fries. I love the crispy roasted potatoes in this, it adds some real heartiness to the burrito.
If you choose to go the homemade route on these ingredients, both the potatoes and salsa verde can be made in advance. That’s actually how I came up with this recipe- I had these things sitting in my fridge and want to use them up. First thing’s first.
For this recipe, you’re gonna need some home fries. You can buy a bag of frozen home fries and bake them up. OR you can make these delicious Oven-Roasted Home Fries 👇🏻
You will also need some Salsa Verde for this burrito. Once again, you have the option of buying a jar from the grocery OR the more delicious route is making your own. I’ve got you covered with this recipe 👇🏻
Now that you have these two ingredients taken care of, let’s get started on making the rest of the burrito.
Let me show you how I made this Verde Steak Burrito 👇🏻
Cooking the Steak.
Remove 1 Lb of thin NY Strip Steak from the packaging and pat dry with a paper towel. Season the steaks with Chili-Lime Seasoning. I bought my seasoning from Trader Joe’s. You could use any steak seasoning for this recipe, but I really enjoyed the Chili-Lime Seasoning for this recipe.
Add 1/2 tbsp of olive oil to a large non-stick skillet over high heat. Let the oil heat up. You want the oil and the skillet to be hot because the steak is thin. You want some good color on the steak, but you don’t want to overcook it. Add the steak to the skillet.
Let the steak cook for 2-3 minutes on the first side. It should have a good char on it. Flip and cook for about another 2 minutes on the other side. The steak should be cooked to about medium. Adjust your cooking time according to your “doneness” preference.
Remove the steak to a cutting board to rest.
Moving onto the Veggies.
To the same skillet, add the remaining 1/2 tbsp of olive oil. Add 2 sliced bell peppers and 1/2 of a sliced red onion.
Cook until the peppers and onion are crisp-tender and slightly charred, about 3-5 minutes. Then add 1 finely minced garlic and cook until fragrant, about 30 seconds- 1 minute.
Remove the peppers and onion to a bowl and wipe out the skillet. Now that the steak has rested, go ahead and slice it.
Ready to Assemble.
Now we’re ready to assemble the burritos. Lay out a burrito-sized flour tortilla. Lay some sliced steak onto the tortilla.
Add some peppers and onions, roasted home fries, 1/4 cup of shredded pepper jack cheese, and about 1 1/2 tbsp of salsa verde.
Tuck the ends of the tortilla and roll it up into a burrito. Make 3 more burritos just like that.
Spray the skillet with olive oil spray and heat it over medium-high heat. Add the burrito, (one or two at a time) seam-side down, and grill it for about 2 minutes until the tortilla is crisp and golden.
Repeat with remaining burritos.
Serve with extra salsa verde on the side.

Verde Steak Burrito
Ingredients
- 1 Lb Thin NY Strip Steak
- Chili Lime Seasoning (Can substitute with steak seasoning)
- 1 Tbsp Olive Oil, divided
- 2 Medium Bell Peppers, sliced
- 1/2 Red Onion, sliced
- 1 Garlic Clove, finely minced
- 1 Cup Pepper Jack Cheese, shredded
- 6 Tbsp Salsa Verde + more for serving * See recipe link *
- 1 Cup Cooked Home Fries * See recipe link *
- 4 Flour Tortillas (burrito size)
Instructions
- Using a paper towel, pat the NY Strip Steak dry. Season with the chili lime seasoning, just giving it a good coating, and gently pat the seasoning into the meat with your hand.
- In a large, non-stick skillet, add 1 tbsp of olive oil over high heat. Let the oil heat up, you want it to be hot so that you can get a good sear on the steak.
- Add the steak and sear for 2-3 minutes on the first side. The steak is thin and you don’t want it to overcook, you just want a good sear. Flip to the other side and cook for another 2 minutes. The steak should be cooked to about medium. Adjust cooking time for preference.
- Remove the steak from the skillet to a cutting board to rest.
- Add the remaining tbsp of oil to the skillet and add the slice bell peppers and onion. Cook until the veggies are crisp-tender and slightly charred.
- Next add the garlic and cook until fragrant, about 30 seconds-1 minute. Remove the peppers, onion, and garlic to a bowl and wipe out the skillet.
- Thinly slice the steak and then begin to assemble the burritos.
- Lay out a burrito tortilla. Top the tortilla with some sliced steak, some roasted home fries, and some of the peppers and onion. Sprinkle on 1/4 cup of shredded pepper jack cheese and then add about 1.5 tbsp of the salsa verde. Make 3 more burritos.
- Tuck the ends and roll up the tortilla into a burrito. Spray your skillet with some olive oil spray. Turn the skillet to medium-high heat and let it heat up for a minute. Add 2 rolled burritos to the skillet (seam-side down) and grill them until the tortilla is crisp and golden. Remove the burritos and then do the same with the remaining 2 burritos.
- Serve with more salsa verde on the side. Enjoy!
