one Bowl, no mixer, 15 minutes start to finish!
Some nights, after we’ve put the kids to bed, I get a craving for a cookie. And some days, I deserve said cookie. Unfortunately for me, I am a total cookie snob. I wouldn’t say that I am a snob about many things, but I have high standards for what I consider to be a good cookie. So if I’m craving a cookie, something like an Oreo isn’t going to do it for me. I want a fresh-baked, just-out-of-the-oven, gooey chocolate-y cookie. But, let me tell you, the last thing that I want to do with the hour or two of quiet time that I have post-bed time is pull out my mixer and bake off 5 trays-worth of cookie dough. So, I decided to “dumb-down” an excellent chocolate chip cookie recipe. I bring to you a Small Batch Chocolate Chip Cookie Fix recipe!
For me, this recipe produced 6 jumbo cookies. So, like, 3 servings… 🤷🏻♀️. Depends on the day, I guess. You can make 12 regular-sized cookies. If I’m given the choice between regular and jumbo, I’d choose jumbo nine times out of ten. (As I try to start thinking of things that I would NOT prefer jumbo over regular.) But we’re talking cookies, and cookies I prefer jumbo.

These cookies are super delicious. Like really, really good. When I was in high school, there used to be these chocolate chip cookies that were sold in the cafeteria that I loved. I don’t know what it was about them, but I was obsessed with them. I think that I occasionally have dreams about them! Ha! Anyway, these cookies reminded me of those high school cookies. They are perfectly crisp around the edges and are so soft and chewy in the middle. Uh, so good. They are also incredibly easy. They’re made in one bowl, don’t need a mixer, and are done in about 15 minutes from start to finish. So beware. You might become obsessed and dream about these cookies.
Let me show you how I made this Small Batch Chocolate Chip Cookie Fix recipe👇🏻
Preheat oven to 350 degrees and line a baking sheet with parchment paper. In a large-ish microwaveable bowl, soften 4 tbsp of unsalted butter until it is almost melted.
Smash the butter up with a rubber spatula and then add 1/4 cup of brown sugar and 2 tbsp of granulated sugar. Stir until well combined.
Add 2 egg yolks and 1 tsp of vanilla and stir.
Add 2/3 cup AP flour, 1/2 (heaping) tsp of baking soda, and 1/2 tsp salt. Using the spatula, stir really well until combined and all flour is incorporated. (Note: Make sure that the flour is spooned and leveled, not packed.)
Add 1/3 cup chopped chocolate. I used dark chocolate, but you can use whatever chocolate that you like- semi-sweet, milk chocolate, whatever. Also, you could use chips, mini chips, or chunks. Doesn’t matter. I love the way chopped chocolate looks in cookies though. Stir in the chocolate.
Using a TBSP size cookie scoop, scoop a heaping scoop of cookie dough onto the prepared baking sheet. (I just used the word scoop 3 times in that last sentence. 😂) I made 6 jumbo-sized cookies. You could make smaller cookies if you wish, but the jumbo are fun. Top the cookie dough balls with a little extra chopped chocolate.
Bake for 12-14 minutes if you made them jumbo as well, less if they are smaller. Mine were perfect right about the 13 minute mark. They may look a little underdone when you pull them out, but that’s what you’re supposed to do with cookies. Then let them sit on the hot baking sheet for at least 5 minutes.
The cookies should be slightly crisp around the outsides and soft and chewy in the middles. If you’re feeling frisky, top those cookies with a little flaky sea salt and take this party to the next level. 😉 They’re still a party if you don’t though.

**Note: 6 Jumbo cookies too much? This recipe is incredibly easy to reduce. Simply halve the ingredients- 2 tbsp butter, 1/8 cup brown sugar, 1 tbsp granulated sugar, 1 large egg yolk, 1/2 tsp vanilla, 1/3 cup flour, 1/4 tsp baking soda, 1/4 tsp salt, eyeball the chocolate. It’s also easy to double. Just sayin’. 😉

- 2 Tbsp Granulated Sugar

- 1 Tsp Pure Vanilla Extract
- 2/3 Cup AP Flour, spooned and leveled (not packed)
- 1/2 Tsp Baking Soda (heaping)
- 1/2 Tsp Salt
- 1/3 Cup Chopped Chocolate + more for topping Use what you like
- Flaky Sea Salt (optional)
Instructions
- Preheat oven to 350 degrees and line a baking sheet with parchment paper.
- In a large, microwaveable bowl, soften your butter in the microwave until almost melted. Using a rubber spatula, smash up the butter.
- Add both sugars, stirring until creamy. Then add the yolks and vanilla and stir until combined.
- Add the flour, baking soda, and salt. (Make sure that the flour is spooned and leveled, not packed). Stir everything together until combined and all of the flour is incorporated.
- Add the chopped chocolate and stir. Use a tbsp scoop and scoop out a heaping tbsp of dough onto the prepared baking sheet. I made 6 jumbo cookies. You can make smaller ones, whatever your preference.
- Top the dough balls with extra pieces of the chopped chocolate. Bake until the edges are slightly crisp and the middles are still soft. Will look a little underdone. Jumbo-sized cookies took about 13 minutes.
- Let the cookies sit on the hot baking sheet for at least 5 minutes before removing. Top with flaky sea salt, if desired (optional). Enjoy!!
