And then there are those days in the Winter where you’re craving a little BBQ, but it’s 8 more weeks until you can even fathom uncovering the grill. Maybe you don’t have to deal with weather challenges like we do here in Ohio. Maybe you live someplace where it’s sunny and 75 degrees all year round. Do those places even really exist? Even if weather isn’t an issue where you live, let’s talk about ease. This Slow Cooker Pulled BBQ Chicken is so darn easy that it’s mind-blowing. You literally throw all of the ingredients into your slow cooker and forget about it until it’s done. And with the addition of a little liquid smoke, you won’t even miss the grill.
Another thing that makes this recipe so fabulous is its versatility. You could literally use this Slow Cooker Pulled BBQ Chicken one million different ways. My personal favorite is in sandwiches, but some other great ways include: tacos, wraps, salads, and pizzas. You could even get really creative and use it in egg rolls or omelettes or grilled cheeses. The possibilities are endless.
Ingredients that you’ll need for
Slow Cooker BBQ Pulled Chicken
Skinless, Boneless Chicken Breasts– you could also substitute with chicken thighs
BBQ Sauce– it wouldn’t be BBQ chicken without a little BBQ sauce. Use whatever brand that you like.
Sweet Onion– adds so much flavor to the chicken. If you’re not an onion fan, you can omit.
Garlic Cloves
Brown Sugar– I used light brown sugar. You could also use dark brown sugar.
Olive Oil
Apple Cider Vinegar– lends a little acidity to the chicken
Liquid Smoke– you can usually find this near the spices. This is an optional ingredient, but it does help to give the chicken a little bit of that smokiness that it would normally get from the grill.
Let me show you how to make this Slow Cooker BBQ Pulled Chicken 👇🏻
To your slow cooker, add: 2 1/2 lbs of boneless, skinless chicken, 1 cup of BBQ sauce, 1 tsp apple cider vinegar, 1 small onion (diced), 3 minced garlic cloves, 1 tbsp olive oil, 1/4 cup brown sugar, and 1 tsp liquid smoke (optional).
Give it a bit of a stir to make sure that everything is well incorporated.
And then cook the chicken on high for 3-4 hours or low for 6-7 hours.
Remove the chicken from the slow cooker, shred, and then place back into the slow cooker with the sauce.
There are a million ways that you could serve this Slow Cooker BBQ Pulled Chicken.
One of my favorite ways is to make sandwiches out of it. Serve this Slow Cooker BBQ Pulled Chicken on a brioche bun and top it with a little bit of slaw and you have one delicious sandwich!

Instructions
- Place all of the ingredients into your slow cooker and mix everything together a bit.
- Cook on high for 3-4 hours or low for 6-7 hours.
- Remove the cooked chicken from the slow cooker, shred, and place back into the slow cooker. Stir the chicken around in the sauce.
