  1. Preheat oven to 425 degrees and line a sheet pan with parchment paper.
  2. Grab a medium-large bowl and add the EVOO, brown sugar, salt, pepper, dried thyme, garlic powder and desired amount of cayenne pepper. Using a whisk, stir everything well to combine.
  3. Add carrots and toss well to coat. Dump carrots onto prepared sheet pan and scrape out any oil-spice mix left behind in the bowl and onto the carrots.
  4. Spread the carrots into a single layer and cook for 20-30 minutes to desired amount of roast-iness. Enjoy!
