Instructions
  1. Add olive oil to a large pot over medium-high heat. Add ground beef and onion and cook until ground beef is cooked, breaking it up as it cooks.
  2. Drain off some of the fat if there is a lot, but you want to leave a little behind for flavor. Add garlic and cook until garlic is soft, about 1 minute.
  3. Add the potatoes, green beans, carrots and celery. Cook for 3-4 minutes until veggies begin to soften.
  4. Add the corn, peas, beef broth, tomato paste, Worcestershire, paprika, cayenne, roasted tomatoes, and about 1 tsp salt and 1/2 tsp black pepper. Add a pinch of crushed red pepper, optional.
  5. Bring to a boil and then lower heat to medium to simmer. Cook for about 25-35 minutes until veggies are soft. Taste and re-season with salt and pepper if necessary.
