Instructions
  1. To a small skillet, add 1 tsp of olive oil over medium heat. Add the chopped garlic and cook until fragrant, about 30 seconds. Do not over cook. Transfer to a large non-aluminum bowl.
  2. To the bowl, add the tomatoes, basil, vinegar, sugar, 4 TBSP olive oil and salt and pepper. Stir to combine. Cover and refrigerate for 6 hours.
  3. After 6 hours, cook pasta according to package instructions. Drain pasta and pour the sauce over the pasta, toss to coat.
  4. To serve, top with fresh basil chiffonade and freshly shaved Parmesan. Enjoy! The pasta sauce can be kept in an air-tight container in the refrigerator for up to 5 days. It is best when enjoyed in the first 24 hours of making it
