There are so many apple crisp recipes out there and quite honestly, they are all probably delicious. I wanted to throw this one out into the world and the reason can be summed up in two words- browned butter. I am totally obsessed with browned butter. I use it anytime that I can when baking. It adds a richness and a nuttiness that is so decadent. It adds a depth of flavor that is unmistakable.
Browning butter is almost no work and all payoff. You’ll want to brown the butter first because it will need to cool before using to prepare the topping. Add 3/4 cup unsalted butter to a saucepan over medium heat. Using a rubber spatula, stir constantly until the butter is melted. Continue stirring as the butter foams and pops slightly. You want to keep cooking it until it smells nutty and turns an amber color. Pour it into a bowl to cool.
While the butter cools, you can start making the apple filling. Preheat the oven to 350 degrees. Cut 8 large Granny Smith apples (sometimes I throw in a Honeycrisp or two) into chunks or slices. I tend to like the chunk more because they’re non traditional. Throw the apples into a large bowl and toss them with the lemon juice and vanilla extract. Add the flour, cinnamon, nutmeg, sugar and brown sugar and stir well to coat the apples. Pour the apples into a glass or ceramic 13×9” baking dish.
One the butter is cooled, start making the topping. To a medium bowl, add the flour, oats, brown sugar, cinnamon, baking powder, baking soda and salt. Whisk together well. Pour the browned butter over the dry ingredients and gently stir until it forms clumps. Mix until all of the ingredients are coated in the browned butter.
Using your hands, drop clumps of topping over the top of the apples.
Bake at 350 for 45-55 minutes until the top is golden brown and the apples are soft. It will look like this…

- Pinch of Salt

It will foam and pop slightly. Continue stirring until it smells nutty and turns amber in color, about 10 minutes. Pour into a bowl to cool.
- Preheat oven to 350 degrees. Place apples into a large bowl. Add the lemon juice and vanilla and stir to coat. Then add the cinnamon, brown sugar, granulated sugar, flour and nutmeg. Stir well to evenly coat the apples. Pour into a glass or ceramic 13x9” baking dish.
- In a medium bowl, add the flour, brown sugar, oats, baking soda, baking powder and salt. Whisk together well. Pour cooled brown butter over top of the dry ingredients.
- Gently stir together until the topping is clumpy and mixed well. Using your hands, gently drop clumps of the topping over the apple filling. Bake for about 45-55 minutes until the topping is golden brown.
- Let cool for 5-10 minutes before serving. There may be a little liquid in the bottom, that will become syrup-y as it sits. Enjoy with vanilla ice cream, if desired.
