I was making myself some oatmeal one morning. While I love oatmeal, sometimes I get a little bored with it. A couple of Honeycrisp apples that were staring at me from my fruit basket inspired me. A few dashes of cinnamon and 15 minutes later, my oatmeal was absolutely outstanding! These Pan-Fried Cinnamon Apples are the perfect topping for almost anything- pork chops, toast, waffles or pancakes. Or they would be great as a side or a snack as well!
It’s best to pan-fry these apples until they are softened, but still a little crisp in the centers. I used Honeycrisp apples because that is all that my super bossy 8 year old will eat. Haha! But you can use any apple that you like or have on hand. These Pan-Fried Cinnamon Apples are super delicious and super simple to make.

Add 1 tbsp of ghee (or butter) to a cast iron skillet over medium heat. Toss 2 large apples-worth of slices in 1 tbsp of fresh lemon juice. And then add them to the skillet.
Pan fry the apples until they are soft, about 6-10 minutes. The length of time that it will take for the apples to soften will depend on how thinly they are sliced.
Once the apples are soft, add 2 tbsp of coconut palm sugar, 1 tsp pure vanilla extract, 1-2 tsp ground cinnamon (amount depends on how much cinnamon you like), and a pinch of salt. Stir well.
Cook the apples in the sugar until the sugar breaks down and becomes syrup-y, about 2-3 minutes.
Remove the apples from the pan and serve.
Store any leftover apples in an air-tight container in the refrigerator for up to 5 days.

- 1 Tbsp Ghee
