I wonder if it’s the Irish in me that is to blame for my love of potatoes. I’m team Samwise when it comes to potatoes, “boil em, mash em, stick em in a stew.” (Nerd alert: in case you didn’t know, that was a Lord of the Rings reference) But, seriously, Sam and I can’t be the only ones this passionate about taters. Especially when it comes to these Oven-Roasted Home Fries.
These Home Fries are insanely simple to make, incredibly delicious, and extremely versatile. They are great for any meal- breakfast, lunch, dinner, whatevs. I would serve these alongside steak or meatloaf or really anything for dinner. If I have leftovers, sometimes I pan fry them in the morning with some peppers and onions and throw an egg on them for an amazing hash for breakfast.
I was not exaggerating when I said that these home fries were insanely easy to make. They take a little bit to soften and crisp up, so you’ll want to cut your potatoes into good, bite-size cubes. But, they are ready from start to finish in under an hour. And let me tell you, they are so so much better than frozen, store-bought home fries. By a lot. So let’s get started…
Let me show you how I made these Oven-Roasted Home Fries 👇🏻
To make them, preheat your oven to 400 degrees and line a baking sheet with parchment paper.
Take those 2 pounds of (peeled or unpeeled) cubed Russet potatoes (you could also use Yukon gold potatoes- my other favorite) and toss them with 2 tablespoons of olive oil, 2 teaspoons of paprika, 1 teaspoon of salt, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and 1/2 teaspoon of black pepper in a large bowl. Make sure that all of the potatoes are coated in the oil and spices. **If you are substituting dried parsley instead of fresh, go ahead and toss in 2 Tbsp of dried parsley now**
Dump the potatoes onto the prepared baking sheet in a single layer, space out as much as possible. You want to give the potatoes room so they’ll get crispy. If they’re overcrowded, they won’t get that crunch.
Bake for 20 minutes, remove from oven, and flip the home fries with a spatula. Put them back in the oven for another 20-25 minutes until they reach your desired crispness. You could also turn your broiler on low for the last couple minutes to crisp them up— Just keep a close eye on them so that they don’t burn.
When the potatoes are done, top with the fresh parsley and stir. Taste for seasoning and add more salt or pepper if necessary.

Note: This Oven-Roasted Home Fries recipe is super delish as-is. But if you want to spice it up a little bit, throw in some chopped onion or other veggies to roast with them (I’d recommend throwing in the veggies halfway through cooking).

Instructions
- Preheat oven to 400 degrees and line a baking sheet with parchment paper.
- In a large bowl, toss the cubed potatoes with the olive oil, paprika, salt, and pepper until the potatoes are evenly coated. **If you are using dried parsley instead of fresh, go ahead and toss it in now**
- Spread the potatoes onto the prepared baking sheet into a single layer, spacing out as much as you can.
- Bake for 20 minutes and then remove baking sheet and flip the potatoes (once again spreading them into a spaced out, single layer).
- Bake another 20 minutes or until the potatoes reach a desired crispiness. You can even turn your broiler on low to crisp them up for a few minutes at the end.
- When done, remove baking sheet and pour the parsley over the home fries and toss. Taste for seasoning and add more salt or pepper if necessary. Enjoy!
