Salsas are the easiest and most fantastic way to spice up a meal. You can take the most simple protein- like grilled chicken, fish or shrimp- and top it with a salsa and then it’s complex and exciting. It can make something feel light and fresh with very little effort. I mean salsas are also great as dips as well. Don’t get me wrong, I’d grab a tortilla chip and go to town on this Mango-Avocado Salsa as well.
For me, this Mango-Avocado Salsa feels bright and Summer-y. This salsa would literally compliment almost any dish. The last time that I made this salsa, I used it to top coconut shrimp tacos. Ah-mazing! It adds such a lovely freshness. I find that I usually crave these kinds of dishes in the dead of Winter, when it’s dark and cold out. While I’m a person that doesn’t mind Winter and cold weather, I do miss the fresh, local produce and my garden. One great thing about this Mango-Avocado salsa is that, even in Ohio, I always have access to these ingredients.
A little mango help:
I realize that cutting a mango can be a little tricky, so I wanted to include this chart (from mango.org) on the best way to cut it. Mangoes have a large very fibrous core that’s inedible. They also have a thick, oily skin that is hard to peel with a traditional vegetable peeler or knife. So check out the chart below. This is the way that I cut up my mango. If you click on the image and it will take you to a more detailed page.
There really isn’t any need for step by step instructions for this salsa. However, I do have one pointer- add all of the salsa ingredients to the bowl except the avocado. Stir everything together, then add the avocado, and gently stir. Adding the avocado last will help to keep it more intact and not fall apart. Also, make sure that there is enough lime juice so that the avocado does not brown prematurely.
*If you are making this in advance, add all of the ingredients except the avocado, and refrigerate. Add the avocado and gently stir before serving. Can be made a few hours in advance. Best eaten the day it is made.
Enjoy!
