So I made a thing. And holy smokes. I prefer homemade cookies to store-bought cookies. The one store-bought cookie that I do enjoy are Oreos. Especially golden Oreos. Good lord, I could get myself into some trouble with golden Oreos. But I had a package of double-stuff Oreos taking up residence in my pantry and I absolutely NEEDED to do something with them. And that something are these Loaded Oreo Blondies.
Have you ever heard of blondies before? Have you ever made blondies before? I’m always surprised when I mention them to people and they don’t know what they are. Blondies, in a nutshell, are brownies without the chocolate base. Personally, I prefer blondies to brownies because they’re slightly less rich (in general) and they’re way harder to screw up than brownies.
Blondies are also super customizable. I packed these blondies full of Double Stuff Oreos, but you could definitely change it up with your favorite cookie or do half chocolate Oreos and half golden oreos—-> I will be doing this ASAP. 😉
Let me show you how I made these Loaded Oreo Blondies 👇🏻
Preheat your oven to 375 degrees. Line a 9×9” baking dish with parchment paper and spray with non-stick spray. You can leave out the parchment paper, but it makes it easier to remove the blondies after they’re cooked.
In a medium bowl, whisk together 1 1/4 cups flour, 1/2 cup light brown sugar, 1/2 cup granulated sugar, 1/2 tsp baking powder, and 1/2 tsp salt. Set aside.
To a large bowl, add 1/2 cup unsalted butter (almost melted and then cooled), 2 tbsp milk, 2 large eggs, and 2 tsp pure vanilla extract. Use a hand mixer to beat until well combined.
Using a silicone spatula, add the dry ingredients to the wet ingredients. Stir until just combined.
Add 12 crushed (Double Stuff) Oreos to the batter (reserve a small handful). Mix until combined.
Sprinkle those reserved Oreos across the top.
Pop into the oven and bake for 25-30 minutes.
The blondies are done when they are golden and an inserted toothpick comes out clean. I like mine still a little gooey, so I pull mine out at 25 minutes.
Let the bars cool completely before removing from the baking dish and slicing.
Waiting for the bars to cool will seriously be one of the most difficult things ev-ah!

- 12 Double Stuff Oreos, crushed
Instructions
