I came across the recipe for these fries from London at Evolving Table last Summer and it was life-changing. These are some of the best fries that I have ever had. Ever. Did you catch that? Not made, personally, but had. Like as in “have ever eaten.” That’s saying a lot because I loooooove potatoes. Maybe that’s the Irish in me. But, seriously, you must give these Crispy Baked Parmesan Garlic Fries a try.
I made a few small changes to the recipe… the most important being the cooking time. I had to cook my fries an extra 10-15 minutes to get the crispy crunch that I like in a fry. Baking them for these few extra minutes will give you that crispiness that you want with fries. I promise you that you won’t even miss the “fried” part of fries.
Let me show you how I made these Crispy Baked Parmesan Garlic Fries 👇🏻
Start by preheating your oven to 400 degrees and lining a baking sheet with parchment paper.
In a large plastic bag, combine the 2 1/2 lbs of peeled, matchstick-sliced potatoes, 3 tbsp of olive oil, 1 tsp of salt, and 1/2 tsp of pepper. Toss the fries around in the bag until they are well coated.
Now lay the fries onto the prepared baking sheet in a single layer, giving them as much space as will allow. The fries need room to breathe in order to crisp up.
Bake for 35-45 minutes, flipping halfway through until they reach your desired crispness. For me, that was right around 45 minutes.
When the fries have about 5 more minutes to cook, add 3 tbsp of unsalted butter to a skillet and melt. Add 4 minced garlic cloves to the butter and stir constantly, cooking the garlic until it is soft and fragrant, about 1-2 minutes.
In a large bowl, combine the fries, garlic butter, 1/3 cup of chopped fresh parsley, 1 cup of freshly grated parmesan cheese, 1/2 tsp of salt, and 1/2 tsp of pepper.
Toss the fries until they are well coated. Then pour the fries onto a platter and top them with any garlic, parsley, parmesan that is left behind.

Crispy Baked Parmesan Garlic Fries
Ingredients
- 2 1/2 Lbs Russet Potatoes, peeled and cut into matchsticks
- 3 Tbsp Olive Oil
- 1 1/2 Tsp Salt, divided Salt
- 1 Tsp Black Pepper, divided
- 3 Tbsp Unsalted Butter
- 4 Garlic Cloves, minced
- 1/3 Cup Fresh Parsley, chopped
- 1 Cup Parmesan Cheese, finely grated
Instructions
- Preheat the oven to 400 degrees and line a baking sheet with parchment paper.
- In a large plastic bag, combine the matchstick potatoes, olive oil, 1 tsp of salt, and 1/2 tsp of pepper. Shake well to coat the fries.
- Spread the fries onto the baking sheet in a single layer, spacing them out as much as you can. The potatoes need space to get nice and crispy.
- Bake in the oven for 35-45 minutes until you reach desired crispness. Flip the fries half way through.
- When the fries have about 5 more minutes to cook, add the butter to a skillet and melt. Add the garlic and cook, stirring constantly, for 1-2 minutes until the garlic is soft and fragrant.
- In a large bowl, combine the fries, garlic butter, parmesan cheese, fresh parsley, 1/2 tsp salt, and 1/2 tsp pepper. Toss to coat the fries.
- Pour the fries out onto a platter and top them with the extra parmesan, garlic, and parsley that is left behind in the bottom of the bowl. Enjoy!
