My husband used to not like ranch and thus I spent years trying to convert him just so I could make recipes like this Chicken, Bacon & Ranch Gnocchi. This gnocchi isn’t just delicious, but it’s also incredibly simple, requires very little prep work, and takes about 30 minutes from start to finish. This recipe would make a hearty and cozy weekend meal, but it’s also no fuss, so it’s great for a weeknight meal as well. Even my picky-eating teenagers will scarf this Chicken, Bacon & Ranch Gnocchi down.
If I’m making this Chicken, Bacon & Ranch Gnocchi on a weeknight, I typically use store-bought gnocchi. I will say that gnocchi is surprisingly easy to make, and so if you’re feeling frisky, I will always say that homemade is always better than store-bought. However, store-bought gnocchi has come a long way and this recipe is super delicious no matter which route you choose to go.
Ingredients Needed for Chicken, Bacon & Ranch Gnocchi
Bacon
Garlic Cloves
Boneless, Skinless Chicken Breasts
Gnocchi– store bought or homemade
Cream Cheese
Milk
Grated Parmesan
Ranch Seasoning
Salt & Pepper
Fresh Parsley, for garnishing (optional)
Let me show you how to make this Chicken, Bacon & Ranch Gnocchi 👇🏻
Begin by cooking 6 slices of bacon in a large, high-walled skillet over high medium-high heat. When the bacon is crispy, remove to a paper towel-lined plate and chop into pieces when cooled.
Remove all of the bacon grease from the skillet except for 1 tablespoon.
Add 2 chicken breasts that have been cut into bite-sized pieces to the skillet. Season with salt and pepper.
Cook the chicken until it is no longer pink and completely cooked through, about 5-8 minutes. Remove the cooked chicken to a plate.
While the chicken is cooking, begin cooking 12 oz of gnocchi (store-bought or homemade) according to package directions.
Now add 2 minced garlic cloves to the skillet and cook until fragrant, about 1 minute.
Then add 4 oz of softened cream cheese, 1 cup of milk, 1/4 cup grated Parmesan and 2 tbsp of ranch seasoning. Lower the heat to medium and whisk the sauce frequently until the cream cheese has melted and the sauce is smooth.
When the sauce is smooth and has thickened slightly, add the chopped bacon back to the skillet (reserve some if you’d like to use some for topping).
And now add the cooked gnocchi to the skillet.
Finally, add the cooked chicken (and juices) back to the skillet. Give everything a good stir. Taste the sauce and add more salt or pepper if needed.
Garnish the gnocchi with chopped fresh parsley, some reserved bacon pieces, and a little bit of grated parmesan cheese.
Serve immediately while warm. I like to serve it with some garlic bread and a garden salad.

- 2 6-8 Oz Boneless, Skinless Chicken Breasts, cut into bite-sized pieces
- 12 Oz Potato Gnocchi, store-bought or homemade
- 4 Oz Cream Cheese, softened
- 1 Cup Milk
- 1/4 Cup Grated Parmesan + extra for topping
- 2 Tbsp Ranch Seasoning
- Salt and Pepper, to taste
- Chopped Fresh Parsley, for garnish
Instructions
- In a large, high-walled skillet, cook the bacon over medium-high heat until crispy. Remove the bacon to a paper-towel lined plate and then chop the bacon once cool.
- Discard all of the bacon grease except for 1 tablespoon. Add the chicken breast to the skillet, season with salt and pepper, and cook over high heat. Cook the chicken until they are cooked through, and no longer pink, about 5-8 minutes. Then remove the cooked chicken to a plate.
- While the chicken is cooking, begin cooking the gnocchi according to package directions.
- Add the minced garlic to the skillet and cook until fragrant, about 1 minute. Then add the softened cream cheese, milk, grated parmesan, and ranch seasoning. Lower the heat to medium and whisk the sauce frequently until the cream cheese has melted and the sauce is smooth.
- Once the sauce is smooth and has thickened a little, add the bacon (reserve a little for topping if you’d like), chicken, and gnocchi to the sauce. Give everything a good stir. Taste the sauce and check the seasoning, adding more salt or pepper if necessary.
- Top with some fresh chopped parsley, chopped bacon, and a little extra parmesan. Serve immediately while warm. I like to serve it with garlic bread and a garden salad. Enjoy!!
