I’m going to level with you… my eye has been twitching for over a week now. It is driving me mad. I figure that it is probably from too much caffeine and not enough sleep. A friend of mine told me that it could also mean that I am low on potassium and to eat a banana. And that’s what I could have done. I could have just eaten a banana. But instead, I grabbed a bottle of Bourbon and made this insanely delicious Bourbon Bananas Foster Topping.
Sure, I could have topped my oatmeal with a regular old sliced banana, but this topping is infinitely better than a plain banana.
Plus it has Bourbon in it. ‘Nuff said.
This Bourbon Bananas Foster topping is super quick to make. Honestly, it probably took me twice as long to cook my steel cut oatmeal than it did to fix the topping. I chose to serve it over my morning oatmeal because who likes to eat plain oatmeal? I worried that it might be too sweet, but all of my worries were squashed as soon as I took my first bite. It is the perfect amount of sweetness!
If you aren’t aware, traditional bananas foster uses rum, not bourbon. Rum isn’t my favorite. And my husband is a total Bourbon snob so we had plenty of options in the Bourbon department. Plus, I figured that I could get him to give it a try if I made it with Bourbon (he’s not a banana fan). He absolutely loved it!
While I used this to top my oatmeal with, you could totally use this as topping for so many things. You could use this topping on ice cream, French toast, pancakes, cheesecake, Dutch babies. So many things.
So let me show you how I made this Bourbon Bananas Foster Topping 👇🏻
In a large skillet, melt 4 tbsp of unsalted butter over medium heat.
When the butter has melted, add 1/2 cup of packed brown sugar, 1/2 tsp of ground cinnamon, and a pinch of nutmeg.
Stir well with a rubber spatula until all of the sugar is wet. Cook the sugar for 2 minutes until it has thickened slightly. Do not overcook your sugar.
Then add the sliced bananas and a pinch of salt.
Gently stir the bananas around in the sugar until they are well coated in the sugar. Cook the bananas for about 3 minutes until they soften a little and start to get caramelized in the sugar.
Then add 2 tbsp of Bourbon (or Rum if you want to go the more traditional route) and 1 tsp of pure vanilla extract. Then, carefully ignite the alcohol using a long match or a candle lighter. Continue to cook until the flame dies out and then remove from the heat.
Serve immediately. This will not store well because the leftovers will get too mushy. I doubt very much that you will have leftovers anyway because this topping is fricking delicious!

- 3 Firm Bananas, sliced on the bias (use greenish-yellow bananas)
- 1/2 Tsp Ground Cinnamon
- Pinch of Nutmeg
- Pinch of Salt
- 2 Tbsp Bourbon (Or you can use the “more traditional” Rum)
- 1 Tsp Pure Vanilla Extract
Instructions
- In a large skillet, melt the unsalted butter over medium heat. Add the brown sugar, cinnamon, and nutmeg. Stir well.
- Let the brown sugar cook for 2 minutes and then add the sliced bananas and pinch of salt. Gently stir the bananas so that they are coated in the sugar. Cook the bananas for about 3 minutes until they are soft and starting to caramelize in the sugar.
- Add the vanilla and the bourbon (or rum). Carefully, ignite the Bourbon (using a long match or candle lighter). Continue to cook until the flame dies out and then remove from heat.
- Best when eaten immediately. Enjoy!
