Am I a weirdo for loving oatmeal? Maybe. I generally have a few over-ripe bananas hanging out on my counter and I ALWAYS have a big ol’ container of oats in my house. And thus this Baked Peanut Butter & Banana Oatmeal was born. Let me just tell you that if you don’t like oatmeal like me, this baked oatmeal recipe could probably bring you over to the weirdo side. It’s like a chewy and delicious oatmeal cookie. Only you can have it for breakfast without people looking at you funny AND it’s totally healthy!
This Baked Peanut Butter & Banana Oatmeal recipe is a made in one bowl and then baked until golden and chewy. You can customize it depending on what mix-ins you have on hand or what you’re in the mood for that week. The leftovers reheat amazingly, by the way.
Let me show you how I made this Baked Peanut Butter & Banana Oatmeal 👇🏻
Preheat oven to 350 degrees and spray a 7” x 11” baking dish with non-stick spray.
In a large bowl, mash 3 over-ripe bananas really well with a fork. Then add 2 1/2 cups of Old Fashioned Oats, 1 cup of milk (any milk, I used Vanilla Almond), 1 tbsp of chia seeds, 1/4 cup of PB Fit (or another powdered peanut butter), 1 tsp baking powder, 1 tbsp ground cinnamon, 2 large eggs, 1 tbsp pure vanilla extract, 1/4 cup pure maple syrup, and a pinch of salt. Mix well.
Mix-Ins:
Add up to 1/2 cup of mix-ins and gently stir. You could use any mix-ins. Fresh fruit, dried fruit, nuts, chocolate chips. Or any mix of things. I used dark chocolate chips here.
Pour the oatmeal mixture into your prepared baking dish. Use a rubber spatula to level it out and then top it with a few extra of your mix-ins to make it look pretty.
Bake in the oven for about 25 minutes until the oatmeal is golden brown and baked through (it should feel springy to the touch and pass a toothpick test).
Let the oatmeal sit in the hot baking dish until it is set and cooled. Refrigerate leftovers in an airtight container or plastic bag for up to one week.
To reheat, simply place on a microwave-safe plate and heat for about 30 seconds or until warm.

- 1 Cup Milk (Any kind. I used Vanilla Almond)
- 1/4 Cup Pure Maple Syrup
- 1 Tbsp Pure Vanilla Extract
- Pinch of Salt
- 1/2 Cup Mix-Ins (Anything you like- fresh fruit, dried fruit, chocolate chips, etc)
Instructions

- Gently stir in 1/2 cup of mix-ins. Pour the oatmeal mixture into the prepared baking dish. Use a rubber spatula to even it out in the dish. Top the oatmeal with a little more of the mix-ins, if desired.
- Bake in the oven for about 25 minutes until the oatmeal is golden around the edges and baked through (should spring back when touched).
- Let it sit in the hot pan until set and cooled. Refrigerate leftovers in an air-tight container or plastic bag for up to one week. Heat leftovers in the microwave until desired warmness. Enjoy!
