I have a household of bacon lovers. As soon as my kids smell bacon cooking, they come a running. I had to fight them off just so I could make this gravy. At first, they were totally mad at the fact that I was using all of the beautiful crispy bacon to make a gravy. But then they tasted the gravy and got on board real quick. I love this Bacon-y Bacon Gravy because, for one, it’s different. It’s not the traditional sausage gravy. I mean, it’s bacon. And bacon is everyone’s favorite breakfast meat, not sausage. So wouldn’t you want a creamy, delicious BACON gravy? Yes. Yes, you would.
My whole family absolutely loved this Bacon-y Bacon gravy. It made the perfect weekend treat for a Saturday brunch. The gravy only takes about 20 minutes to make and it can even be made in advance because it reheats so fabulously (just toss it in a skillet on low until it is heated through). If you haven’t tried bacon gravy, you really must give it a try!
Let me show you how I made this Bacon-y Bacon Gravy 👇🏻
In a large skillet over medium-high heat, cook 12 pieces of diced bacon until crispy.
Remove the bacon to a plate lined with paper towels to absorb the excess grease. Carefully pour the bacon grease out of the skillet and into a bowl and wipe down the skillet.
Add 5 tbsp of reserved bacon grease back to the skillet over medium heat. And then add 3 tbsp of unsalted butter and melt.
Now add 1/2 cup of AP flour. Whisk constantly until the flour is incorporated and smooth.
No lumps 👇🏻 Cook the flour for 2 minutes, whisking constantly.
Slowly add 3 cups of milk to the skillet. I used 2 cups of 1% and 1 cup of heavy cream. You could use all milk, but I wanted that extra creaminess of the heavy cream.
Whisk constantly until the milk is smooth and there are no lumps. Add some salt, pepper, and a pinch of crushed red pepper flakes (optional). Cook the gravy, stirring occasionally, until it has thickened.
Add the crispy bacon pieces back to the skillet. Reserve some for topping the gravy with later.
Stir and give it a taste to check for seasoning. Add more salt or pepper if necessary.
Serve the gravy warm. Preferably over some fresh baked buttermilk biscuits. I’ll link my Simple Buttermilk Biscuits below. 😉
Enjoy!!
