I made breakfast on a Saturday. On a Sunday, I found myself with leftover home fries and leftover bacon gravy. Bacon gravy is, actually, extremely delicious leftover by the way. So what is one to do with leftover home fries and leftover bacon gravy? The obvious answer is to make this Bacon Breakfast Poutine. Okay, maybe it wasn’t obvious to you. But let me tell you about this dish…
Have you heard of poutine before? It’s a Canadian (more specifically Quebec) dish typically consisting of fries, brown gravy, and cheese curds. Anytime that I have leftover gravy, my mind instantly thinks of making poutine. Heck, even when I don’t have leftover gravy I think of poutine. Poutine is just such a fantastic comfort food. Hot, crispy potatoes smothered with a creamy gravy and then topped with cheese curds. Second best thing to ever come out of Canada. (Ryan Reynolds was the first best thing , in case you were wondering. 😉)

There aren’t any real step by step instructions to this recipe. It’s really just all about assembly. Before you can get to the assembly, you need to have your mis en place because you want to eat this while it’s hot.
Things that you will need.
First, you will need a tray of crispy Oven-Roasted Home Fries. You can use store-bought home fries, but I can’t testify to the flavor of store-bought home fries. And these, I can definitively say, are totally delicious. Here is the recipe for the Oven-Roasted Home Fries 👇🏻
Second, you will need some prepared bacon gravy. Sure, I’m going to go ahead and say that I am partial to my Bacon-y Bacon Gravy. Bacon gravy is so simple and so delicious. Bacon gravy is no runner-up to sausage gravy in terms of flavor. I feel like Johnny from Dirty Dancing because it makes me want to say, “Nobody puts Bacon Gravy in the corner.”
Seriously, though, you have to try it. I think it works better than sausage gravy here because then you can also top this Poutine with crispy bacon pieces. Win, win. Here is the recipe for the Bacon-y Bacon Gravy 👇🏻
And last, but not least, you’re going to want some crispy bacon pieces and cheese curds. I used a 5 oz bag of cheddar cheese curds. I found them in the “special cheese” case in my grocery.
Assembly.
Now, it’s all about assembly. Spread out a layer of the crispy Oven-Roasted Home Fries. Ladle on some of the Bacon-y Bacon Gravy. And then top it with some crispy bacon pieces and some cheddar cheese curds. I also threw on a little chopped fresh parsley for a little color (totally optional).
You want to eat it while it is fresh and hot. This won’t make great leftovers, so share. Invite some neighbors and friends if you need to. They’ll be indebted to you because this Bacon Breakfast Poutine is incredibly delicious.
(Feel free to top it with a couple of fried eggs as well, if that’s your thing.)
